October 9

Great food today.
Lunch
As usual, I started my lunch bowl by filling it with chopped spinach.  Farley steamed green beans and a bell pepper.
In addition to the chopped tomatoes, she mixed some blackberries and strawberries.
I added some brown rice and ground flax seed.
A very enjoyable lunch.  I am not missing breakfast at all.
Dinner
Farley made a simple but tasty dinner.  The main dish was a mixture of lentils, tomatoes, and cauliflower.  Guess what it was served with.  Yes, a large bowl of chopped greens with brown rice with some walnuts on top.  It was topped with steamed broccoli and zucchini.

Lentils and Cauliflower Stew

2 C lentils rinsed
1/2 head of cauliflower cut into flowerettes (use more if you want)
Fresh tomatoes chopped (I used a variety of 8 small salad size tomatoes)
6 C water

Place all ingredients into a large high-sided pan or soup pot and bring to a boil.  Once boiling bring down to a simmer for about 45 minutes to an hour partially covered with a lid.  Stir occasionally to avoid any sticking.  Add water if it is or is getting too thick for your taste.

  1. I am enjoying your blog so much. I reminds me to keep things simple. I lost 5 pounds this past week eating this way. I ordered ETL revised edition last night. I had a slip yesterday and had a slice of pizza but I am back on track today. Thank you and your lovely wife for blogging I really appreciate it.

  4. I haven't commented in a few days, but check in regularly! I haven't been 100% perfect but way way better on the challenge than before, and the scales are definitely dropping! I don't have that much to lose, so to lose so quickly down in the last 10-15 pounds is saying something.

    It has been educational to see how often I would reach for something processed, and now I stop myself (ok, 99% of the time! A couple of slip-ups..) My tastes are changing as I am being stricter with myself. And, I'm getting a bit better at understanding true hunger. We still over half of October left, so I am getting even more excited at the changes that should come along.

  5. Thanks for sharing your experiences here. I'm a Fuhrman follower but also McDougall learner! Both doctors teach life saving food truth for which I am so grateful. It does seem clear to me that the Eat To Live principles are a refinement of the basic healthy vegan diet.

  7. Red lentils! We enjoyed this for dinner last night. I liked the idea of mixing rice with greens; we used arugula, lightly steamed. And broccoli on the side added a nice touch. Thanks for the idea!

  8. Yes bebe, they were red lentils. I couldn't tell one from another, but was able to Skype with Farley last night and confirmed that the ones she uses are red. i'm glad that you liked the dish. It is not that hard to fix tasty and visually appealing dishes.
